Fiesta Fun

Ingredients and method to make hand crafted Mexican beans.

2 1/2 cups pinto beans to be soaked with 1/4 tsp of baking soda overnight in more than double the water.
2 1/2 tsp hot taco mix powder
1/4 tsp cumin powder
1/2 tsp chili powder
1 tsp ground garlic
1 large yellow onion or 2 medium yellow onions finely sliced.
1 tbsp oil
salt to taste.
cilantro for garnish.

1.Place a pan on the stove, heat, pour oil,put in the sliced onions and fry till transparent.

2.Put in the ground ginger, the cumin powder, the chili powder and the taco mix and stir for a minute.

3.Add the beans and the salt and some water and simmer for a while.

4.Keep checking from time to time adding water as needed.

5.It takes about an hour for the beans to cook completely. In a pinch the beans can be pressure cooked in a cooker and then added after the spices are stirred in.But I find that the taste is enhanced when the beans are simmered slowly on the stove.

6.Garnish with cilantro

Serve with flavored tortilla or plain tortilla ,salsa and sour cream or with any rustic bread and chewy bread.
